Today, on the 25th July is the Feast of Saint James the Apostle, especially celebrated by the diocese of Šibenik dating from the year 1298, which central point is the Cathedral of St. James. Our Pelegrini Tavern is located in an old palace built within defense walls of the city of Šibenik, next to the cathedral, where the noble family “Pellegrini” used to live.
St. James cathedral is the most important architectural achievement of the 15th and 16th centuries on the territory of Croatia, and in 2000 it was included in UNESCO’s World Heritage List. The cornerstone of the cathedral was laid by Bishop Bogdan Pulšić on the April 9, 1431. Interesting fact is that April 9 is also a birthday of our Chef Rudolf Štefan, who decided to start his gastronomic pilgrimage next to the cathedral.
For 11 years now, we keep admiring the beauty of the cathedral, which we consider a part of Pelegrini. Inspired by rich history and tradition, closely related to the cathedral, today at the Feast of St. James we present you our new dish –Saint-Jacques shell.
Gastronomy has always been an integral part of our culture and as a proof – the cathedral is embellished with food symbols: fruit, herbs, roosters, oysters and mussels, as well as the before mentioned Saint-Jacques shells. In the Christian context, this shell is traditionally associated with St. Jamesand even received a Latin name after him (jacobaeus).
The baptistery of the Šibenik cathedral, a small rounded quadrilateral floor space, is considered to be the first early Renaissance sculpture in Dalmatia. In the center of the baptistery, there are three lively little children with wings carrying baptismal water. Above them are semicircular niches of Saint-Jacques shell.
In honor of St. James, our Pelegrini team led by Chef Rudi and his long-time Sous Chef, who’s name wasa named after the saint Jakov (Croatian name), created a special dish made of Saint-Jacques shell, which you can taste in Pelegrin.
Our Sous Chef Jakov, named after the saint, has been with us since the very beginning, from the day he came during school cooperative education some 15 years ago. Today, Jakov is the Sous Chef of Pelegrini, who together with Chef Rudi, creates plates inspired by local ingredients, with respect to our tradition and the culture of Šibenik region.
